7 Can Vegetable Soup


  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 1 can of diced tomatoes
  • 1 can of Rotel
  • 1 can of garbanzo beans
  • 1 can of mixed vegetables
  • 1 can of potatoes
  • 1 can of butter beans
  • 1 can of green beans
  • Salt and pepper to taste


1. Heat the olive oil in a large pot over medium heat. Add in the chopped onions and cook until tender. Add the contents of all the cans, including the liquid. The liquid from the cans will become the broth of the soup.

2. Stir together and bring to a boil. Reduce the heat to medium-low and simmer for 10-15 minutes. You can top this with green onions, cilantro, or any other fresh herbs, cheese or croutons, or this soup could be served with bread or crackers.

Other canned good options to include: canned chili, corn, canned beans (black, pinto, kidney, chili, navy, etc), carrots, mushrooms, canned soup (tomato soup, vegetable soup, etc), cream soups (cream of chicken, cream of mushroom, cream of celery, etc), any canned vegetable, or canned meat.
